Pepperoni is a highly popular pizza topping, and for good reason. Whether it's the wide, flat circles of , the fermented log of beef, pork, and spices is a perfect topping for . The virtue of pepperoni as a pizza topping is not in question. But the classic combination of cheese, sauce, and bread is highly versatile. There is much more to the world of delicious pizzas than either cheese, pepperoni, sausage, veggie, or supreme. A good way to start exploring the near limitless depths of good pizza combinations is to change up a familiar protein. As a protein option, pork has a rich depth of textures and flavors possible, varieties which often work well as pizza toppings. Keeping in mind the culinary rule of thumb that good flavor takes time, an easy and delicious pepperoni replacement on your next pizza is leftover pulled pork. Try pulled pork instead of pepperoni to up your pizza topping game Although pepperoni takes longer to ferment than pulled pork takes to cook, both proteins take time to reach their full flavor potential, and shortcuts will show in the meat quality. With the care and patience required to do it right, the richness of pulled pork can near-seamlessly replace pepperoni as a pizza topping. For best results, pair your pulled pork pizza topping with a BBQ sauce base. However, a tomato sauce can also work, as suggested by the fact that some BBQ sauces are themselves tomato- or ketchup-based. To boost the flavor of your topping to-be, to mix with the pork and spread on top of your pizza before cooking, to lend your leftovers a burst of fresh flavor. To give the pulled pork even more impact, consider topping your pizza with a smoked cheese, which nicely complements the ultra-savory flavor. Recommended

Bill C-284 is the Act to establish a national strategy for accessible eye care. (Michelle Siu/Canadian Press) An act to establish a national eye care strategy has become law. Put forward by Liberal MP Judy A. Sgro, Bill C-284's goal is to provide accessible eye care to all Canadians, with an extra emphasis on serving rural populations. Dr. Nina Ahuja of the Canadian Ophthalmological Society says a large part of the importance of the bill is to make sure that comprehensive eye exams are made available to everyone, with a focus on ensuring that eye conditions are picked up early. The bill orders the development of a national eye care strategy. Ahuja said she expects this strategy to come into effect in the next two to three years. She said the Canadian Ophthalmological Society sees a successful path forward through new technologies and resources like telemedicine — where assessments can be done on location and sent to a main centre for diagnostics. "The idea with this, then, is to set up centres and offices where we have people trained to use these technologies who can then transmit these images to optometrists, internal ophthalmologists depending on the need," Ahuja said. Further, the bill aims to push eye care to be provided by an integrated network of specialists, from opticians, optometrists and ophthalmologists. Ahuja said creating networks or "a tapestry of eye care provision" between different vision health practitioners is crucial for the plan to be effective. "That's really looking at the patient journey from, you know, having usual sight to getting those initial exams and then, you know, being monitored and progressing through the treatment if required," she said. The challenge in distanced health care is ever-present. The distance could complicate getting equipment and training to remote locations. Internet connectivity is also a factor that could impede access to the national eye care strategy, said Ahuja. Awareness of the importance on eye health is another challenge the strategy needs to meet, she said. "Certain conditions, if not diagnosed early, can actually have a significant impact on vision health as a long-term sense," Ahuja said. The last time Canadians heard tell of a legislated national eye care strategy was in 2003. Ahuja said things are looking a lot different this time around. "It's certainly not going to take over 20 years," she said.BARCELONA, Spain (AP) — Barcelona lost at home for the first time this season when the Liga leader was stunned by Las Palmas 2-1 on Saturday. Sandro Ramirez and Fábio Silva scored for the Canary Islands club on either side of Raphinha’s equalizer to give Las Palmas its first win at Barcelona in more than 50 years. Barcelona played superbly in the first three months under new coach Hansi Flick and was flying high after convincing victories over Real Madrid in the domestic competition and Bayern Munich in the Champions League. It had won all eight of its home games. But it has gone three rounds of La Liga without a win. Before Las Palmas, it fell at Real Sociedad 1-0 and drew at Celta Vigo 2-2 after squandering a two-goal lead in the final minutes. The dropped points mean Madrid, despite its own troubles , especially in the Champions League, can move ahead of Barcelona in La Liga. It trails Barcelona by four points with two games in hand. “I don’t care about scoring, I care about winning,” Raphinha said after his standout performance was unable to end Barcelona's slump. “We have to take a hard look at what we are doing wrong. We have slipped in our form and are letting games get away form us. We have our next game on Tuesday (at Mallorca), and we need to turn this around so we can win the league.” Atletico Madrid was only two points behind Barcelona in second place — and with the same number of games played — after Antoine Griezmann scored a gem of a goal in a 5-0 demolition of last-placed Valladolid. History for Las Palmas Las Palmas savored its first victory at Barcelona since the 1971-72 season and just its third victory at the Catalan club overall. The other visits by the modest side that wears all yellow uniforms to Barcelona have ended in 34 defeats and three draws. “We are thrilled because we have made history,” Sandro said. “When you start the season you think that these games are usually going to end in wins for the bigger side, but if there is one thing we believe in is our capacity to work hard all week to get results like this.” Barcelona's Lamine Yamal returned from a right ankle injury that sidelined him for three weeks. Yamal appeared as a halftime substitute and Jasper Cillessen saved his best shot. The Las Palmas goalkeeper also palmed a Raphinha free kick over his bar in the final minutes. Sandro, a former Barcelona youth player, capped a fine five-pass buildup by Las Palmas from its own box as it masterfully undid Barcelona’s high pressure in the 49th minute. Raphinha had already hit the crossbar in the first half before he equalized in the 61st. The Brazil forward took a short pass from Pedri just outside the area, skirted across the edge and drilled a shot between two defenders. But Barcelona was caught pushing forward for a second goal when Silva controlled a ball from Javi Muñoz and sent in a shot bouncing past Iñaki Peña in the 67th. The unexpected loss dampened Barcelona’s celebration of its 125th anniversary, which included the debut of its new mascot “Cat,” a large, yellow feline wearing its team kit. Balde carried off Barcelona lost left back Alejandro Balde early in the game when he couldn’t continue after he crashed into Sandro at full speed. Balde appeared to hurt his upper chest or neck area when he ran into Sandro’s shoulder. He was carried off on a stretcher and replaced by Gerard Martín. Griezmann applauded Griezmann scored one of the goals of the season when the forward exchanged a quick one-two with Julián Alvarez and used a sleek touch of the inside of his boot to roll the ball with him as he spun before dinking it over the Valladolid goalkeeper. That was the visitor's fourth goal. Shortly after, Valladolid fans stood up and applauded when Griezmann was substituted. “That is what every players wants, to make people enjoy what we do. So I appreciate their warmth,” Griezmann said. Atletico also got goals from Alvarez, Clement Lenglet, Rodrigo de Paul, and Alexander Sorloth. Espanyol ends losing streak Espanyol beat Celta 3-1 to end a streak of four losses in the league and relieve pressure on coach Manolo González. Alaves also drew with Leganes 1-1 at home. ___ AP soccer: https://apnews.com/hub/soccer Joseph Wilson, The Associated Press
TORONTO — Canada's main stock index edged higher in trading on Wednesday, helped by strength in the technology sector, while U.S. stock markets also rose. The S&P/TSX composite index was up 5.45 points at 25,641.18. The index took a “breather” Wednesday ahead of key labour market indicators set to be released both in Canada and the U.S. this week, said Angelo Kourkafas, senior investment strategist at Edward Jones. Statistics Canada will report the latest data from the national labour force survey on Friday, the same day the November jobs report is due in the U.S. “That's the last important data point for the Bank of Canada before they meet next week,” said Kourkafas. November was a strong month for equities, he said, so it isn't surprising that investors are digesting the gains while they await new data. He said it’s expected that Statistics Canada will report an acceleration of job gains after last month brought a “relatively weak reading,” with job gains at about half of what analysts were expecting. While Canada’s central bank is expected to cut its key interest rate a fifth straight time on Dec. 11, the size of the cut could depend on that jobs data, he said. “We're now looking at a rebound, but as the Bank of Canada deliberates between a quarter point cut versus half a percentage point cut, I think what we are going to see in terms of unemployment rate and the base of job gains is going to have a say into that,” said Kourkafas, adding that wage growth is another important metric to watch. “If we see steady job growth and slowing wages, that can potentially tilt the Bank of Canada towards a larger cut.” In New York, the Dow Jones industrial average was up 308.51 points at 45,014.04. The S&P 500 index was up 36.61 points at 6,086.49, while the Nasdaq composite was up 254.21 points at 19,735.12. U.S. markets were propelled by strength in the technology sector, said Kourkafas, highlighting strong results in quarterly earnings released this week by Salesforce Inc. and Marvell Technology Inc. “I think today's results highlight that there is still a long runway and still enthusiasm, excitement about artificial intelligence and kind of that multi-year adoption cycle,” he said. SUNRISE, Fla. (AP) — Spencer Knight made 20 saves, Mackie Samoskevich scored with less than a second left in the second period, and the Florida Panthers got four goals in the third to beat the Carolina Hurricanes 6-0 on Saturday and complete a two-day sweep. Aleksander Barkov, Sam Bennett, Aaron Ekblad, Evan Rodrigues and Adam Boqvist also scored for Florida, which won 6-3 at Carolina on Friday. The Panthers have won three straight — that streak following a stretch of six losses in seven games for the Stanley Cup champions. It was Knight's fourth career shutout, his first since Nov. 9, 2022 — also at home against Carolina. Spencer Martin made 23 saves on 28 shots for the Hurricanes, who have dropped four of their last six games (2-3-1). It was Martin's fourth consecutive start for Carolina.
